Awesomely Easy Meatloaf

I had a good and easy meatloaf recipe that I lost. I’m sure it’s somewhere among all the recipe cut-outs that I have. Since I couldn’t find it and today was my father-in-law’s birthday, and he loves meatloaf… I had to create my own somehow.

I tried and it turned out really well. Everyone was impressed. The secrets of my meatloaf lay on the marinara sauce and bell pepper.

You know sometimes you eat meatloaf and it’s just tasteless, bland or dry? Well, not anymore! Try adding some marinara sauce and bell pepper. It’s so yummy!! I like to packed my meatloaf with lots of veggies.

Here is what I created:
1 red or yellow bell pepper, seeded, small diced
1 cup chopped spinach (optional)
1 cup chopped mushroom (optional)
1 onion, diced
2 cloves garlic, minced
1 pound ground beef
2 eggs
3/4 cup Italian breadcrumbs
1 tablespoon Worcestershire sauce
1 tablespoons dried basil leaves
1 teaspoon oregano
1 tablespoon italian seasoning
1 tablespoon chopped Italian parsley leaves
1 teaspoon salt
1/2 teaspoon black pepper
2 cup marinara sauce- divided
1 and 1/3 cup parmesan cheese, divided

Preheat oven to 350 degrees F.

Chop all the veggies, parsley, garlic and onion. In a big bowl, put in ground beef and separate them with your hand. Put in veggies, onion, garlic, and parsley. Mix them together. When they all mix well, add eggs, breadcrumbs, Worcestershire sauce, 1 cup parmesan cheese, 1 part of marinara sauce, and all the seasonings. Mix them all well. Add salt and pepper to taste.

Spray a loaf pan with cooking spray. Pack the meat mixture into a loaf pan, if you do not have a loaf pan, any kind of pan will do as long as it’s deep. After packing the meat, sprinkle with the remaining parmesan cheese on top and press them lightly.

Bake for approximately 50 to 60 minutes or until done (the meat will look brown). Top the meatloaf with the marinara sauce, and then put it back in the oven to broil for around 5 minutes.

Remove from the oven, let rest for 5 minutes before cutting and serving.
