Shrimp Truck Scampi

I miss Giovanni’s shrimp scampi on the North Shore on Oahu. When I was still dating my husband, we used to drive up to Kahuku almost every weekend to eat the shrimps. So, I made up this recipe with some help from recipes I found on Google. Although as usual, none of them satisfy my picky palate. I just had to experiment it myself!

I know it really well that Giovanni’s shrimp scampi has tons of garlic in it, and I’ve seen them marinating the shrimps, too. So, that helps.

Here is what I came up with:

1 lb big shrimp- shelled
1/4 c. olive oil
juice of one lemon or you can use 2-3 tbps “Real Lemon” juice
5-6 good size fresh garlic, smash and minced and (yes, you see it right!) 2-3 tablespoon of jarred minced garlic.
salt and pepper to taste

Marinate the shrimps in the olive oil, minced garlic, jarred minced garlic, lemon juice, salt and pepper overnight.

Next day, stir fry everything but the shrimp over medium-low heat until the garlic is golden brown with the marinate olive oil you used to soaked the shrimps. Put up the heat to medium- high and add the shrimps. Keep stirring until the shrimp are pinkish in color. Remove immediately and serve shrimp over rice. You can scraping all the little garlic bits onto the rice, if you like.

I’ve been making this recipe several times now, and am happy!! Let me know what you think!
