I have to admit that I came up with this recipe because I really wanted to make a shrimp dish, and had too many avocados at home.
I goggled for a recipe. There are tons of recipes, and none of them really fit into what I wanted. So, I just made one up myself. Turned out, that it was pretty good. Again, I just eyeballed the recipe. The result, I was rather impressed with myself 😉
1 lb shrimp- shelled on or off is your preference
1/2 bunch of cilantro- finely chopped
2- 3 squirts of lime from “Real Lime” juice
1 clove of ( or more if you like) chopped finely
1 small avocado
1 tomato- seeded and cut small
1 red bell pepper
1 red onion- it’s a must ( red onion makes any salad tastes good!)
2 tbp oil- to fry
1 tsp olive oil
Mix the lime juice with garlic and cilantro for marinating. Set aside a little of the mixture and add olive oil for your salad dressing. Set aside.
Marinade the shrimp with garlic, cilantro and lime. I like the shrimp shelled on. So, I poked the shrimp a little with a fork to let all marinade to get in. I left it overnight, so the shrimp would absorb all the juice. The next day, I would stir fry them until they are pinkish orange and cooked then set aside.
Cut up the rest of the ingredients for salad and arrange them, just like preparing any kind of salad. Put the shrimp on top then drizzle the salad with the marinade mixture with olive oil that was set aside.
